Recipe: Vanilla Soy Scones


Hello!! Here is another of my soy recipes. I'm having so much fun making adjustments to all of my favourite recipes, so far the results are pretty good!!

Last year I was working as a Sole-charge Chef in a cafe. Every morning I made scones for the shop, i know the recipe off by heart and I love how easy and quick they are!! These are quite often my late-night go-to for pudding, bf and flatmate love them and they fill the house with a yummy vanillery smell...

If you don't have soy milk, just add normal milk and some vanilla essence or extract.

Vanilla Soy Scones

3 C Flour
6 t Baking powder
75g Butter
1 1/2 C Vanilla soy milk, plus extra for glaze

t oven to 200 degrees Celsius on bake.
Sift flour, salt and baking powder into a bowl. Microwave cubed butter for 10-20 seconds to soften slightly. (Don't melt!) Add to flour and rub in with hands until mixture resembles bread crumbs. Add milk and mix to combine with a butter knife. Loosely pack mi
xture together, if it's a little sticky add some flour. Avoid kneading - this will toughen the scones! Sprinkle a board with flour, throw mixture on and pat out flat until approx 2-3cm thick. Cut out rounds with a floured glass or cutter and place on a floured and lined baking tray. Brush each scone with vanilla soy and bake for approx 10 minutes or until risen and golden brown.

Enjoy fresh from the oven with your favourite jam, butter and/or cream!
